according to my research..

lots of good food + not enough self-control = pangs of guilt.
it's true every summer. it's my daily battle. my vicious cycle. i have to learn to say no.

but on breakfast, i splurge. it's one of the fringe benefits of camp; big breakfasts on the weekdays. thick slices of french toast, campfire biscuits and scrambled eggs, blueberry muffins, boatloads of fresh fruit, and this coffeecake. this is why we are at work by 7 am, smiling. breakfast breathes life into our tired bodies and makes mornings beautiful! i wish no one in the world had to skip this meal.

by the way, this is my favorite coffeecake on earth. i'm so happy it found me.

Overnight Berry Coffee Cake

2 cups all-purpose flour
1 cup sugar
1/2 cup brown sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt

1 cup buttermilk
2/3 cup melted butter
2 eggs, beaten
1 cup fresh or frozen raspberries or blueberries

topping: 1/2 cup brown sugar, 1/2 cup chopped nuts, 1 tsp. cinnamon

The night before:
Combine all dry ingredients in a large bowl. Combine the buttermilk, butter, and eggs in another bowl. Mix the wet with the dry ingredients and fold in berries, if using. Cover and refrigerate. Mix together the topping ingredients in a small bowl, cover, and set aside until morning.
The next morning:
Pour into a greased 9x13 and sprinkle with topping. Bake at 350 degrees for 45-50 minutes, or until done.

Breakfast is by far my favorite meal of the day. French toast sounds really good right now. Glad you are enjoying the most important meal of the day and thanks for sharing the recipe!

i wish i had a piece of that cake right now to go with my coffee! i love mornings with leisure time, to enjoy a great cup of coffee and something sweet to go with it! i will definitely have to try this recipe!...and to put it together the night before...even better!

It's decided--I'm making this tonight. After all, my husband needs his energy for his big canoe outing starting tomorrow. I will just do what I can to help start his day off right.

Your job at camp sounds so fun and wonderful! I love to cook and bake so that is right up my alley. Thanks for the recipe for the coffee cake! It sounds delicious! I have everything on hand to make this...except the berries...of course! need to go to the fruit market!!

i will be making this as my refrigerator has pints of fresh blueberries and dozens of eggs waiting to be used! i don't like to bake much in the summer so i just wish it wasn't quite so hot outside. thanks for the recipe.

I made this tonight using the berries I got at the farmers market yesterday to take to work in the morning. (I don't wake up in enough time to bake it in the morning.) This is so amazing. I might just stay up all night eating it and not take it to work after all. I add some cloves and a touch of almond extract. Oh my Summer! You might have started me on my way to an addiction!

Hi there! I'm a semi-new reader and my hunny happens to love coffee cake so this is perfect. One question: are you supposed to refrigerate over night before baking the next day? Or just leave it in the fridge for an hour or so?
