room for one more granola recipe? i usually don't sway from the best granola on earth, but this stuff is really good. i can't stop eating it. (in fact, i'm having a bowl right now.) i've been itching to make up my own new mix since i've seen so many good-looking granolas floating in the blogs lately. but i wanted something tailored to me. so here i am. throwing my hat in the ring of granola recipes.

pbgranolajar

this mix is healthier than it's more dessert-like counterpart in my recipe archives. it's lightly sweetened with honey, swaps out vegetable oil for nourishing coconut oil, and has real peanut butter in it! once baked, the pb taste isn't overly strong, it just gives a nice nutty-salty vibe. it still has plenty of cinnamon, which for me, is what unites all the granola parts to a whole. i'm finding it's perf when i have a craving for something sweet, but not too sweet, at night. you can eat it straight up, by the handful, definitely. with yogurt and bananas, too. or in milk, with some raisins sprinkled in- and you have a bowl of pb & j.

pbhgranola

peanut butter & honey granola

4 cups rolled oats*
3 T. ground flax seed
1/2 cup chopped almonds
1 cup shredded coconut
1-2 T. cinnamon (depending on how much you like it)
1/2 tsp. salt (scant)
1 T. vanilla
3 T. extra virgin coconut oil
3/4 cup real peanut butter
1/3 cup honey

preheat oven to 300. mix first 7 ingredients in a large bowl. melt together coconut oil, peanut butter, and honey over med-low heat until smooth and runny, stirring constantly. pour pb mixture over oat mixture and stir well to combine. spread onto a jelly roll pan and bake for 45 minutes, or until golden and dry, stirring every 15-20 minutes.

*i actually used 3 cups rolled oats and 1 cup of unsweetened shredded oat cereal, because i was looking for a way to use it up. next time, i'll just use oats.

mmmmmmm. mm.

ps. did you see my "action" photo?! i'm so excited:)

Yum. Granola is one of my all-time favorite things. This is definitely what I'm going to try next!

I love granola so much! My Mum raised us on it when we were growing up, and I have never found a cereal to rival home made granola. I will definitely be trying out your recipe when I get my hands on some coconut oil!
Thanks for sharing - as always it's a joy to come and visit your little spot.

love homemade granola. i will have to try this version. i have heard that there might be a connection between eating lots of peanut butter when pregnant and your baby having peanut allergies. not sure if this is true, but something you might want to check on. love your blog

Do I have room for another granola recipe from Summer? Umm, Duh-Doy. Of course! (There's a little Community quote for ya.)

Yum!! I've been making granola lately, too! I just love that you can control what "stuff" actually goes in it and nix all that yucky unnatural stuff. And once you've eaten homemade granola... you just can't go back to the store-bought stuff. Ever.

I can't wait to try this. I've made and adore the Camp Shetek granola (maybe a little too much).

P.S. I was reading through your archives and came across your posts about the story of how you and Grant came to be. Can you write another installment?

Hey Summer!
I tried making this last night and I had a little trouble with the time in the oven. I took it out about 10 minutes prior to the 45 bell after stirring it once every 15 minutes. It still came out slightly charred. Admittedly, I didn't use a very big cookie sheet, and so the granola was evenly spread, albeit in a thick layer. Any suggestions? And I'll join in a hearty amen to Laura's request for another installment of your Grant story

@brooke.. ooh, i'm so sorry! and YES, i think a larger pan will make all the difference. you definitely don't want it to lay in a thick layer. i use a 17 x 11 inch pan when i bake mine. also, feel free to shorten the baking time as necessary for your oven! please let me know how it goes next time:)

No worries Summer! I will def try that next time! Not ready to throw in the towel after one attempt! Thanks for the suggestion!
