spinachsalsasalad

usually when i pack a lunch for school it's a sandwich or leftovers from dinner, but today i had the makings for this. sounds pretty simple, because it is. and simple things are usually the best things.

spinach + chicken cooked in olive oil, s&p, and garlic + a sprinkle of cheese + salsa dressing. 
presto.. a spinach salsa salad. easy. mmm.

the "salsa dressing" is just a teaspoon or so of sour cream whipped into my favorite salsa. so good.

what are you having for lunch today? any simple ideas to share?

My cravings lately is a chicken "gyro".
Pita Bread,tomato,leftover chicken with some homemade tzatki sauce.

16 oz. plain yogurt or greek yogurt
1/2 hothouse cucumber or 1 regular cucumber, peeled and seeded
2-3 cloves garlic, pressed through a garlic press (or finely minced)
1 tsp. white wine vinegar
Salt and pepper
Squeeze of fresh lemon juice
Extra virgin olive oil

To make the tzatziki sauce, strain the yogurt using cheesecloth over a bowl. Let strain for several hours or overnight, if possible, to remove as much moisture as possible.

Shred the cucumber. Wrap in a towel a squeeze to remove as much water as possible. Mix together the strained yogurt, shredded cucumber, garlic, white wine vinegar, salt and pepper to taste, and lemon juice. Drizzle lightly with olive oil. Refrigerate for at least 30 minutes before serving to allow the flavors to meld.

I have been obsessed with a simple chicken wrap lately.

I used spinach or any other kind of low carb tortillas
baby spinach
chopped bell peppers
chopped summer squash
grilled chicken strips
some shredded cheese
1 tbs of sour cream mixed with chili powder and paprika.
if I don't use the sour cream mix I used tomato pesto. Both are amazing!!

It takes me less than 5 minutes to make this in the am:)

That looks super-yummy! I've been obsessed with spinach salads of all sorts this pregnancy. And guess what! I recently heard that spinach is one of the best things to eat for helping Baby's brain develop. Not sure if it's actually true, but it sure makes me feel good about all the spinach I've been devouring!

Today is a cold and snowy day, though, and what I want is a cheesy baked potato, so I think I'll make one up the cheater way with the microwave. : ) Maybe I'll use up the last of my caramelized onion-balsamic reduction for roast on my potato too. Does that sound weird? It sounds kinda weird to me too, but it tastes good.

my lunch today is my current fave salad!
any greens, the more the better...esp watercress and spinach, crumbled feta cheese,
vinegar and oil dressing(freshly mixed together in a bowl, then spoon it on) and top with sunflower seeds! yum! i could eat this salad every day for lunch! (you can add tuna, salmon, turkey, chicken too, for more protein)
