For years I've wanted to like this stalky stuff, and now I've finally figured out my strategy for eating it.

1. with almond butter. for some reason this is a better pairing than peanut butter for me.
2. in juice. as in, freshly-pressed juice to start your morning. (i bought a juicer, and i've got a new hobby.) i have been sipping a few celery stalks, a few carrots, and a bit of orange every day. apples make the most awesome mix, so i try to save those for an extra sweet glass on the weekends.

Do you eat celery? I like that it's one of the cheapest veggies to buy organically. I find myself grabbing a couple bunches every time we go to the store now.

Yes! I'm one of those crazy ones that will just break off a stalk of celery and munch on it for a snack. So good! We normally just eat ours in salad! :-)

I have never really cared for celery. I tried it a hundred times, but can't get myself to like it.

I eat it if it is cooked and in a soup like minestrone or in jambalaya, or anything but whenever I cook a recipe calling for celery, I'd leave it out.

Oh gosh, I've also become a recent convert (though any nut butter does the trick for me). I'll even pre-load the stalks with nut butter and stick them in the fridge. :-)

my college roommate and i made up a few food rules:
1. anything is better with either peanut butter or ranch dressing.
2. celery is the worst food ever because it is greatly improved by BOTH.

i'll have to try it in juice :)

I love that you just posted this! I started a juice diet about 30 days ago and hate celery, but LOVE juiced celery!

Best way to eat celery for me is with honey. It's a great snack! I'm so glad you found ways to love this crunchy, juicy vegetable!

Juicing? Never thought of that, must try. Have you heard that celery is actually "negative" in calories? It apparently takes your body more energy to digest it than you actually get from eating it. Wondering if that was actually true?

Hmmm sounds great to juice it with the other things! I usually use it in what is commonly referred to as "the holy trinity" in Cajun cooking, which is basically a sofrito of celery, green peppers and onion. It's a great base for a lot of soups and stews. Still working on liking it raw.. With peanut butter and raisins.
