Good morning, friends! I can't believe I haven't talked to you about this super, super simple breakfast idea yet. Get ready. It's so easy. I can see it possibly being the best holiday breakfast to adopt for the month of December. So warm and cozy! Add extra cinnamon, and perhaps a splash of egg nog? Mmm. It could even be a side dish when you make the traditional egg casserole or spinach quiche for Christmas morning! Perfect!! I love dreaming up fancy menus. But anyway. Maybe it will come in handy for you. or your kids. Especially if you like a hot cereal kind of breakfast or need a gluten free option.
I'll make this fast: this dish is scrumptious. Steamy rice loaded with cinnamon, vanilla, wholesome honey, and a dab of healthy fat. It's like the ultimate combination for an energy boost, and really quick if you have some leftover rice already in your fridge (which I basically keep at all times). A little pot of this rice has been so great for me when I'm feeling like I need some carbs to start the day...
or a snack that's more like dessert.

By the way, do you wake up ready to eat protein breakfasty stuff or carb stuff? or both? I just asked a friend this the other day. I'm fascinated. So tell me! I love hearing other peoples' priorities and routines! 

Sweet Cinnamon Rice
not really a recipe. feel free to make it up as you go. here's the idea..

1 spoonful of coconut oil (or butter)
1 generous serving of cooked rice, brown or white
4 dashes of cinnamon
2 dashes of vanilla extract
1 pinch of sea salt
1 spoonful of raw honey
optional: a splash of egg nog or full-fat coconut milk

Melt coconut oil over medium heat and add in rice, cinnamon, vanilla, salt, and honey. Heat, stirring occasionally, until warm through. Taste and adjust ingredients as needed. If it's lacking a little flavor, add more coconut oil and a smidgen of vanilla. It should be tasty enough that I could catch you closing your eyes and saying "mmmmm" at the first bite. Literally.

I love a nice cinnamon-y bowl of oatmeal in the morning. Definitely a carb breakfast eater. Usually for Christmas morning I made us cinnamon rolls. They're so easy to make ahead & finish baking the morning of.

Yum! I think I will be trying this in the next day or two! I prefer to have bacon with my breakfast...or really just with anything!

Okay I'm so happy you posted this. We've been making this on mornings when there's nothing else for breakfast (going eggless has really thrown me through a loop!) and I've felt Guilty like I'm feeding my kids poorly. So thank you for making this little breakfast of ours amazing! :)

That looks delicious! I love throwing some pumpkin and vanilla extract into my oatmeal. Its so delicious.

My mom made this a lot for us growing up. She usually added raisins to it too. Still a favorite of mine.

i might just have to try this today! i usually go for a green smoothie and/or eggs (my fav)… but sometimes do the carby thing on the weekends.
