menu ideas from my kitchen.
things from last week, this week, and a few soon-to-come. just because i know i like to hear what other people are eating for dinner.. hint hint. would love to see a meal idea from you in the comment section. maybe it could be the best thing you've eaten in the past 72 hours. i'll pick my favorite meal, too.
1. grilled chicken + bowtie pasta + homemade alfredo sauce. this is my fave marinade for the chicken.
2. tater tot hotdish (note my minnesota vernacular.. 'hotdish'). grant's favorite. i like to add ketchup and extra cheese when i eat it.
3. swedish pancakes + scrambled eggs. made tonight with those pretty brown eggs in the photo above. they came from the farmers' market and they made me feel ultra farm wifeish.
4. beef quesadillas with sour cream and salsa.
5. these sandwiches from the pioneer woman. they were serious stick to your ribs stuff.
6. deep dish pizza. always pepperoni at our house.
7. honey lemon chicken with potatoes and carrots. (from grandma marian's garden. woohoo.) this cooked in the crockpot while i was at church sunday morning. i love crockpot mornings.
8. the favorite.. mexico texaco. it's my brother-in-law's recipe and love the name. it's sort of a skillet enchilada served over rice. makes mean leftovers for lunch.
9. tuna melts with dill pickle spears. i don't like onion or celery in my tuna, but i do use mayo, dill, lots of black pepper, and a dash of italian dressing. if i'm making cold sandwiches, i like to add chopped pickles and hard boiled eggs.
10. spaghetti with bolognese sauce and cheesy garlic bread.
11. chipotle style burritos. which means cilantro lime rice, black beans, and a spicy marinade.
12. and finally, once it gets really and truly cold outside, chili + grilled cheese. i can't wait.

Hi Summer, I have been enjoying your blog for awhile now, but just finally coming round to commenting. The mexico texaco sounds delish - any chance of posting the recipe (my picky eater bf loves mexican!)
My favourite dish in the last little while has been my old standby - homemade macaroni and cheese.

One of Luke's new favs: Chicken and green chili stew with yellow squash and zucchini (added just at the end, with the heat turned off and the lid on...I let it sit this way at least 10 min. until the squash are tender), I make this like chicken noodle (carrots, celery, onion) but with a little (okay, sometimes a lot) of extra garlic and onion, and as much green chili as I can stand. I also use either egg noodles or potatoes depending on what we have.
We like to eat this with really chewy bread, preferably with cheese baked on it in some way.
Another fav: Grilled brats and taters (fried, mashed, baked, it doesn't matter) Just two rules in our house with this one; the buns must be big and thick (i.e. no wimpy "wonder buns"), and I must never, never get sauerkraut anywhere near my hubby. :)
Tillamook cheddar and rye bread grilled cheese sandwiches and home made tomato soup. That's what we had tonight. It was perfect.
Your menu sounds so great! Mmm, quesadillas. My favorite dish this week has been chicken tetrazzini. I made it for the first time and it was oh so good. Make for good leftovers too.
I have two favorites that I made this week - oven "fried" chicken tenders with homemade mac&cheese - and chili. I love these two - because I make the entire box of macaroni and a big pot of chili and you get the cheesiest chili-mac for left overs... yummm!
Honey Lemon chicken in the slow cooker - that sounds so yummy.
Tough to narrow it down - Homemade Runzas, Moo-Shu pork (or chicken), and chicken & black bean soup ... yummmmmm!
you will have to post some of these recipes! they all sound sooo good. I would especially like your chili recipe...those cold days are coming..soon! At our house, of course, the chili will be served with cinnamon rolls!

I could go on forever!
i see that you like bowtie pasta.. well this is my favorite go-to meal. i adore spinach salad, but with pasta and mandarin oranges and such.. it makes the best entree. seriously delisch. i wish i could invite you over. will email you the recipe. it's a must-make.
