i've been getting fresh eggs and tomatoes at the farmers market. so i decided to put them together.

step one. slice off the top 1/2 inch of the tomato and scoop out the insides. sprinkle with s + p.

step two. whisk one egg and add fresh basil, s + p. pour into tomato shell. load up with shredded parmesan. repeat steps with more tomatoes and eggs, if needed.

step three. bake in a 350 degree oven for about 30 minutes, or until egg is firm.
and if you aren't big on thick pieces of tomato, you could easily do the egg part in a muffin pan and add chopped tomato to taste.
ps. guess what.. the bunk is all finished! it's all clean white and looks so cute in the corner of 'the blue room.' (which by the way, we've come to love. it's going to stay blue.) i'll have to show you a picture soon. i keep walking in there just to admire it.
pps. i got a bike! for 15 bucks at a thrift shop. i'm excited. but i think i've forgotten how to ride. my first ride was so fun!

That recipe looks so delish! I usually just eat my tomato on the side...but this looks like a fun and yummy twist!! I am so glad that you also share a love for eggs and tomatoes!

I love your blue room...I feel like I have seen a picture. I can just imagine how nice and clean that crisp white looks against the wall!

shawn & i rode bikes last fall (before i was pregnant) & i definitely felt a tad wobbly at first...and i was scared of riding over curbs or giant cracks...but i never wrecked! :) a very fun way to exercise.

love this idea...looks so great & easy to! i can't wait to try. er um went on my first bike ride this year, in many years....it was a wobbly start but left me wondering why i abandoned this past time for so many years!

love that you remembered how to ride a bike. so desiring a bike these days, but 3 kids 3 and under seem like a hard trip with a trailer hitched on. soon enough!
