i've had a request to share my menu (thanks!) 
and i'm more than happy to.

monday: oatmeal pancakes (because we skipped on sunday night) with crushed berries instead of syrup (i actually like this better than syrup now), side of fresh fruit, and i will make eggs with this meal if we're really hungry.

tuesday: homemade whole wheat pizza with red onion, tomatoes, roasted red pepper, and basil + a side salad. and usually apple slices. we eat them after almost every meal. 

wednesday: grant has class. i pack him a dinner (probably leftover pizza), and i usually end up eating leftovers or eggs.

thursday: a big salad (romaine, roasted chicken, homemade dressing, parmesan, grated carrot, thinly sliced apple) + a side of roasted carrots or sweet potatoes.

friday: homemade chili + chips and homemade salsa + watermelon.

for snacking: i have orchard apples, peanut butter, avocados, bananas, carrots, peanuts, and roasted red pepper hummus on hand. 


what are you eating this week? any simple meal ideas for me? with lots of real, good food?!! please leave me a note in the comments! i'd love to hear. **how about pumpkin curry soup w/ a side salad + fresh tomatoes, parmesan & ham w/ homemade dressing? or..
**vegetable [peppers, tomatoes, zucchini & yellow squash] & chicken kabobs [marinated] w/ a side of dill-flavored couscous? or...
** crockpot - pot roast w/ a side salad & some applesauce sprinkled w/ cinnamon for dessert?

Summer, I made your Panera style broccoli soup last night. I always have to double the batch for my family and it's always a hit. A simple healthy meal that my whole family loves is one from Allrecipes*see link* Instead of 1 tomato I use one can of fire roasted diced tomatoes undrained, and I add a lot more veggies like mushrooms, yellow squash, small zucchini. Toss in any veggies you have on hand. Don't omit the feta, it makes the meal!

I made a large batch of your broccoli cheddar soup on Sunday. I froze half of it and am eating the rest of it for dinner this week. I'm kicking myself for not making homemade bread to go with it. I also made sloppy joes from the Pioneer Woman Cooks. The hamburger was fried in butter so I feel a little guilty eating them, but oh man are they good. I froze half of that also. I've been eating the rest of it with roasted broccoli. (Which by the way is one of my new favorite foods!)

I can't wait for the pizza dough recipe. I love to make homemade pizza. I want to make some dough and freeze it!

My favorite pancake topping is actually greek yogurt (2%) swirled with really good jam. Sweet and tart and perfect with pancakes.

Here is a hearty recipe for bean soup that I threw together if you are interested. If you add the fresh pasta it comes out very tasty, is filling and can last for several meals. Plus it's cheap to make. Love your blog, I'm glad I stumbled upon it. Have fun with your "real food" eating adventure I hope that it opens up many new culinary adventures for you.

i came across your blog and think you are darling! your pizza sounds so so yummy. thank you for posting such good, clean recipes! here is one i like!:

Vegetable Chicken Stir-Fry:

1 lb. skinless, boneless, fat-free chicken breast

4 c. fresh assorted veggies (broccoli, shredded carrots, bell peppers, etc)

1 clove garlic, finely chopped.

1/2 c. of your favorite stir-fry sauce.

stir-fry chicken on med. heat on sprayed skillet for 3 mins, until no longer pink, remove from heat. spray skillet with cooking spray. add veggies and garlic; stir-fry about 2 mins, or until crisp. add chicken and sauce. cook and stir for about 2 mins or until hot.

serve over whole grain rice.
