over the summer we got our first crop of ruby red rhubarb. from our own backyard! remember when we planted those teeny baby rhubarbs?

I only used 1C of sugar...and substituted Stoneyfield Vanilla yogurt for the buttermilk. You could also use sour cream! So yummy! You can eat it for breakfast, like a coffee cake...or any time of day!

My newest favorite way to use rhubarb: make syrup for pancake night! Chop 1 cup fruit, 3/4 cup sugar, 1/3 cup water...boil down to desired consistency. (I usually serve immediately...will thicken after it is refrigerated~ then I use as jam!) If I have them, I like to throw in a few raspberries for a beautiful color.

My husband LOVES rhubarb pie and I usually make him one for his birthday. Here's the recipe I use: http://kickinkitch.blogspot.com/2009/07/fresh-rhubarb-pie.html The crust is super flaky and the rhubarb is perfectly sweetened.
