there was a time, not so long ago, that i wouldn't have found anything i like to eat at the farmers market. honestly. but now that i've become a vegetable fan, fall is so much more meaningful. now, it's "harvest season."  and we are so spoiled right now! it seems like all the good vegetables are growing currently, locally. yay. i got really excited when i saw this idea for diy stir fry vegetable freezer packages the other day on simple bites. (love this real food blog!) basically the concept is to stock up while things are fresh and in season, blanch them, mix them, and put them in the freezer to eat in the dead of winter. and you can just toss them in the pan frozen! nice.

i really want to do this! blanching has a lot of benefits, so i'm pretty excited to bring down my giant pot and watch zucchini bob around in it. of course the veggies in this photo were all eaten up at dinner the other night, so i haven't started the process yet. :) we love making a big stir fry in our cast iron for a super simple meal. here's what we do.

simple stir fry
(or yummy sauteed veggies, if you don't do the meat)

2 to 4 chicken breasts
a few good drizzles of olive oil
salt and pepper
4 cloves of garlic, minced
a few handfuls of chopped vegetables.. whatever you have on hand:
broccoli, cauliflower, zucchini, carrots, snow peas, peppers, asparagus, etc.
maybe more garlic? :)

brown chicken in olive oil on both sides, adding salt and pepper to taste. once chicken has been cooking 15 minutes or so, add the veggies. drizzle with more olive oil. sprinkle with salt and pepper, and add garlic. cut chicken into bite size pieces, toss everything, and continue cooking until veggies are tender.

i could eat this all the time.

I completely understand being able to eat stir fry every day. I think I could almost eat my Cambodian mother-in-law's stir fry every meal!

Love this! Such an easy way to preserve local vegetables. I will definitely be doing it. My husband is practically obsessed with stir fry.

Yummm. Those fresh veggies look so delicious, Summer. We do a stir fry of some sort almost every week...it is so versatile and can taste different every time depending on what veggies/meat combos are used! Love the blanch/freezing idea for winter!

Looks and sounds delicious! I'm craving for broccoli, but in the part of Italy where I live they are only good in winter. We still get great fruit tough! Have a good day!

Mmmmm...this is one of my favorite late summer meals! I should hit our farmers' market this week and see what I can find. :D

i make a similar meal almost once a week, but i add a can of chopped tomatoes & italian spices at the end & throw over whole wheat pasta. yum!
