I do not want to mix pumpkin with cornbread. No.
Cornbread is perfect as it is. I'll have it straight up plain, please.
And pumpkin is for mixing with chocolate. It's dessert
I will not have them in the same pan.

But I did have them together, my friends. I don't know what happened in my stubborn mind to make me do it, but I mixed them. Annnnd... It's a whole different animal. Tender. Moist. Sweet. Scrumptious. I know you're trying to picture what it tastes like. Well, don't think pumpkin, because the taste is so mild it's barely there. Don't think cornbread either- it's way too luscious, not crumbly or dry. 
It actually reminds me of... 
graham crackers!
Yes. It took me until day 2, eating it cold out of the fridge to nail it- but the coconut sugar makes it taste like a big, soft graham cracker! It's so delicious, I'm planning on making it over the Thanksgiving days next week. It would be perfect with leftover turkey, or a spicy chili, or as a holiday breakfast. 

Pumpkin Cornbread
(gluten free, dairy free)

1/4 cup melted coconut oil
1/4 cup coconut sugar
1 T. honey
1 large egg
1/4 cup coconut milk
1 1/2 tsp. vinegar
1/4 cup pumpkin puree*
heaping 1/4 tsp. sea salt
1/4 tsp. baking soda
1/2 cup corn meal
1/2 cup rice flour

Blend coconut sugar with all of the wet ingredients. Mix in dry ingredients. Don't overmix. Add batter to a greased pie plate or 8x8 inch baking dish. Bake at 350 degrees for 20-25 minutes, or until golden brown and a toothpick stuck in the center comes out clean. Serve with cinnamon sprinkled on top, if you like. Mine was too sweet to serve with extra honey, but I love to do that, so next time I will cut back on the sugar. 
*I may have done more like 3 Tablespoons of pumpkin. I didn't want it too strong.

I noticed that lately many of your recipes for baked goods call for vinegar. What's it for? I really love pumpkin and I can't wait to try your pumpkin pie recipe. Have a great weekend!

LOVE keeping up with your blog. I always feel so motivated and encouraged to bake and cook after reading your posts. However, my current kitchen is lacking and could use a good stocking. Any chance you could post about the ingredients you always keep on hand? And maybe the kitchen tools/things you think are necessary? (I'm getting married in April and have gift registry on the brain!) I remember a post you had about the coconut oil etc., but I am just curious of what you think are the "essentials"
